Balti karahi is the other staple worth seeking out: slow-cooked mutton or chicken with subtler spicing than the heavier Punjab version. For a quick, cheap bite, chapshuro from the bazaar stalls is hard to beat.
Two traditional dishes reward the curious. Skiu, a handmade pasta in broth, is a winter dish you usually have to ask for specifically — it rarely appears on a written menu.
