Baltistan's food is understated and excellent, but you eat well here by following local rhythms rather than looking for a fancy menu. The single best thing to order is trout — river trout, fried or curried, at around Rs.400-800 a fish. Balti karahi is the other staple worth seeking out: slow-cooked mutton or chicken with subtler spicing than the heavier Punjab version. For a quick, cheap bite, chapshuro from the bazaar stalls is hard to beat.

Two traditional dishes reward the curious. Skiu, a handmade pasta in broth, is a winter dish you usually have to ask for specifically — it rarely appears on a written menu. And daal chawal is the universal fallback when nothing else is open. Hygiene is generally fine at busy places where the turnover is high; trust the stalls and dhabas that locals queue at.
